Chickpeas with spinach Recipe

Ingredients

2 and 1/2 cups of chickpeas (already cooked and drained)
3 cups of spinach (I measured with the raw leaves)
Half a stalk of leek/french garlic
Spicy paprika




Preparation

Soak the chickpeas the day before and cook in a pressure cooker for 20 minutes. Uncover and check if they are ready. They should be cooked, but firm, without falling apart.
In a frying pan, heat a dash of olive oil and add plenty of spicy paprika. Add the leek and sauté for five minutes.
Add the coarsely chopped spinach leaves, cover for about 3-5 minutes and turn off the heat.
Add the spinach with the chickpeas, adjust the salt, add pepper, a dash of olive oil and, if you have some in the fridge, freshly grated parmesan cheese.
