Banana and Caramel Cake Recipe
Ingredients
For the cake:
2 eggs
200g ripe banana
180g flour
180g dark brown sugar
12g baking powder
170g unsalted butter
Butter for greasing
For the caramel:
65g butter
280g dark brown sugar
250ml cream
Salt to taste
Preparation
1. In a bowl, mix the dark brown sugar and unsalted butter at room temperature. Add the eggs and mix with a mixer.
2. Sift the flour and baking powder together.
3. Cut the banana into small pieces, add to the cake mixture and mix.
4. Grease a baking tin with butter and greaseproof paper. Pour the mixture into the tin, spread it out evenly and tap the tin to set. Bake at 170ºC for 20 to 25 minutes.
5. In a saucepan, add the dark brown sugar, cream, butter and a pinch of salt and boil everything together to make the caramel.
6. Remove the cake from the oven and let it cool a little. Unmold the cake while it is still warm, make a few holes with a knife and drizzle with the caramel.
