Baked Sweet Potatoes


Ingredients


2 medium sweet potatoes, peeled and sliced

2 tablespoons olive oil

1 saffron pistil

White pepper to taste

Fresh chopped parsley




Preparation


Heat a pan with water and, when it boils, add the potatoes.

Let it cook for 5 minutes and drain well.

Mix the olive oil, saffron and pepper and coat the potato slices well.

Place them on a baking sheet and bake in a medium oven (180º C) for about 1 hour.

When they are golden brown, remove them from the baking sheet and sprinkle with parsley.
