Tasty recipe for the famous Francesinha
Ingredients
Sauce and Francesinha:
1 onion
2 cloves of garlic
1 bay leaf
Olive oil to taste
2 dried red chillies
1 can of peeled tomatoes (small ones)
1 tablespoon of Worcestershire sauce to taste
50ml of good Port wine
50ml of good white wine
1 beer (good)
1 tablespoon of cornstarch
Cold water to taste
Sliced bread
2 rump steaks
Sliced Cheddar cheese
2 good fresh sausages
2 good thin sausages
Smoked leg of pork (ham)
Sliced Flamengo cheese
Salt
Pepper
1 egg
Preparation
1. For the sauce, start by very finely chopping the onion and garlic, and sauté them in a generous drizzle of olive oil with a bay leaf; 2. As soon as they start to turn golden, add the chilli pepper and the peeled tomatoes, which you will break up with your hands in the pan; bring to the boil and add the Worcestershire sauce, port wine, white wine and beer; 3. Once the alcoholic beverages have been drained, add the cornstarch diluted in cold water, season with salt and pepper and bring to the boil, stirring occasionally; 4. As the sauce is served in a sauceboat, which is beautiful, you will need to strain it before transferring it to the sauceboat, however, the longer it is on the heat, the more it will thicken, which will improve; 5. For the Francesinha, start by drying the veal steaks with kitchen paper, season them with salt and pepper and set aside; 6. Cut the fresh sausage and chorizo lengthwise and then in half; 7. In a very hot frying pan or on a griddle, fry the sausages, chorizo and steaks very briefly; Start by frying the chorizo, which always uses the fat for the other meats!
8. Rub the bread on the bottom of the frying pan and start assembling the francesinha: first the bread, then the cheddar cheese, the ham, the sausage, the steak, the chorizo (do it like you're playing Jenga), another slice of ham and a slice of Flemish cheese, the other slice of bread and finish with a sumptuous cheese topping;
9. Bake in the oven preheated to 230ºC just to melt the cheese; Serve with a fried egg and sauce and enjoy!
