Oven-baked rice recipe
Ingredients
300g of cooked steamed rice
1 chopped onion
1 chopped garlic clove
100g of grated mozzarella cheese
2 cans of tuna in olive oil (drained)
140g of sweetcorn
1 grated carrot
2 tablespoons of chopped parsley
2 eggs
100ml of cream
3 tablespoons of grated parmesan cheese
200g of cooked broccoli florets
Breadcrumbs to taste
Salt and pepper to taste
Olive oil to taste
Green salad to accompany
Preparation
1. In a frying pan, heat 2 tablespoons of olive oil and sauté 1 chopped onion and 1 chopped garlic clove, add 1 grated carrot. Then add 2 cans of previously drained tuna, 140g of sweetcorn and season with salt and pepper to taste. 2. Place the mixture in a large bowl and add 300g of cooked rice and 200g of cooked broccoli florets. Mix everything well, being careful not to break the rice grains too much.
3. In a bowl, beat 2 eggs, 100ml of cream, 100g of grated mozzarella cheese, salt and pepper to taste.
4. Add the egg mixture to the rice mixture, add 2 tablespoons of chopped parsley and mix everything together.
5. Place the rice mixture with the eggs in a serving dish and distribute evenly.
6. Sprinkle with 3 tablespoons of grated parmesan cheese and breadcrumbs on top. Bake in a preheated oven at 180ºC for 20 minutes.
7. Serve hot with a green salad.
