Huevos Rancheros Recipe
Ingredients
1/4 meat sausage
1 small onion
1 drizzle of olive oil
1/2 bell pepper
Salt and pepper to taste
Cumin to taste
Sweet paprika to taste
Chili powder to taste
400g canned chopped tomatoes
400g canned red beans
4 eggs
Coriander to taste
Slices of cornbread to taste
Preparation
1. Fry the sliced sausage in a drizzle of olive oil.
2. Cut the onion into half moons. Add and sauté.
3. Cut 1/2 bell pepper into strips and add to the onion, which should be a little golden brown by now. Season with salt, cumin, sweet paprika and chili powder to taste.
4. Mix everything together and add the chopped tomatoes.
5. Add the red beans, stir and let it boil a little.
6. Make 4 small holes and add an egg to each one. Cover and let it cook for another 5 minutes.
7. Toast the desired slices of cornbread.
8. Chop the coriander.
9. Add the cornbread to the mixture and sprinkle with the coriander.
