 Delicious Olive Oil and Passion Fruit Curd Cake Recipe


Ingredients


Olive oil cake

300g sugar

Zest of 4 lemons

210g extra virgin olive oil

5 eggs

150g Greek yogurt

160g almond flour

160g plain flour

Pinch of salt

1 ½ teaspoon baking powder

½ teaspoon baking soda

Passion fruit and olive oil curd

3 gelatin sheets

180g seedless passion fruit pulp

3 egg yolks

3 eggs

225g sugar

10g cornstarch

80g extra virgin olive oil

200g 35% cream

Finishing

Blackberries to taste

Fresh passion fruit seeds to taste

Olive oil to taste





Preparation


Cake


1. In a large bowl, combine the sugar and lemon zest. Crumble with your hands to add flavor. Add the olive oil, eggs and yogurt and mix with whisks.

2. In a separate bowl, add all the dry ingredients and mix.

3. Add the dry ingredients to the liquid ingredients, little by little. Divide the mixture between the two previously greased and lined baking tins.

4. Bake in a preheated oven at 170ºC for about 25 to 30 minutes or until a toothpick inserted into the center of the cake comes out clean.

5. Allow to cool completely before adding the cream.

Passion Fruit Curd

1. Soak the gelatin sheets in ice water for at least 20 minutes.

2. Heat the passion fruit pulp in a saucepan.

3. In a separate bowl, add the eggs, egg yolks, sugar and cornstarch and mix. As soon as the pulp boils, pour it into the egg mixture in a thin stream, stirring constantly with whisks.

4. Return everything to the pan and heat until you get a thick cream.

5. Turn off the heat, add the gelatine sheets to the pan and mix.

6. Pass the curd through a fine sieve into a measuring cup. Blend the curd with a hand blender while adding the olive oil until it is completely emulsified and leave to cool.

7. Once the cake is ready to be assembled, beat the cream until stiff.

8. Divide the curd into two parts and fold the cream into one of the parts.

Finishing

1. Place the curd on top of one half of the cake, covering with the other half of the cake.

2. Spread the curd with the whipped cream over the cake and, with the help of a spoon, arrange a little more of the passion fruit curd that is left over.

3. Garnish with passion fruit seeds and blackberries.

4. Finish with a few more drops of olive oil on top.
