Delicious Fancy Farófias dessert recipe
Ingredients
Crème Anglaise
450g whole milk
150g cream
4 egg yolks
60g sugar
2 tablespoons orange blossom water
Farófias
5 egg whites
70g sugar
Finishing
Sliced strawberries to taste
Corn flowers to taste
Preparation
Crème Anglaise
1. In a saucepan, add the milk and cream and bring to the boil.
2. In a separate bowl, add the egg yolks and sugar and mix with whisks. As soon as the milk is boiling, pour it in a thin stream over the egg yolk and sugar mixture, stirring constantly.
3. Transfer the mixture back to the saucepan and cook until the temperature reaches 82ºC.
4. Remove from the heat, pass through a fine sieve into a bowl and flavor with orange blossom water. 5. Cover the custard with cling film and let it cool completely in an inverted bain-marie. You can put it in the freezer to make it faster.
Farófias
1. In a large bowl, add the egg whites and sugar. Beat until you get a firm, glossy meringue.
2. Place the meringue on a baking tray lined with baking paper inside rings and smooth it out with a spatula. Remove the rings and bake in a preheated oven at 160ºC without ventilation with a tray of boiling water in the bottom of it, for 2 to 5 minutes or until the surface of the farófias is dry.
Finishing
1. On a deep plate, make a base of strawberry flakes.
2. Arrange the farófia and a few more strawberry flakes on top.
3. Drizzle with the custard and, at the end, garnish with corn flower petals.
