Cornbread Recipe


Ingredients


For the yeast

100 g water

50 g plain flour

15 g fresh baker's yeast

1 tsp sugar

For the cornbread

300 g water

260 g cornflour

1 tsp salt

40 g olive oil

100 g plain flour + flour for dusting





Preparation


1.

Prepare the yeast dough: place all the ingredients in the bowl and set for 30 seconds at speed 3. Set aside in a separate container and let it rest.

Wash the bowl and prepare the cornbread dough: pour the water into the bowl and heat it for 3 minutes at 100°C at speed 2.

Add the cornflour and salt and set for 1 minute at speed 4. Remove the lid from the bowl and let it cool for 30 minutes.

Add the reserved yeast dough, the olive oil and 100 g of flour and set the Knead function for 4 minutes.


5.

Sprinkle the work surface with flour, make a ball with the dough, sprinkle it with flour and place it on a baking tray also sprinkled with flour. Leave to rise for about 60 minutes.


6.

Preheat the oven to 200°C.


7.

Bake the cornbread in the oven for about 50 minutes. Leave to cool and serve.
