Vegetarian Christmas Wreath Salad with Falafel
Ingredients
1 pack of Falafel
100g mixed lettuce leaves (iceberg, purple, etc.)
75g pomegranate berries or half a pomegranate
4 fresh figs
5 dates
30g whole pecan kernels
2 tbsp dried cranberries
1 small red onion
6 tbsp olive oil
2 tbsp pomegranate syrup
1 tbsp balsamic vinegar
salt to taste
pepper to taste
Preparation
Cut the dates into pieces, slice the figs and roughly chop the walnuts. Prepare the cranberries and pomegranate berries.
To prepare the dressing: Chop the onion as finely as possible and mix with the olive oil, pomegranate syrup and balsamic vinegar using a whisk/wire whisk until everything is well combined. Add salt and pepper to taste. Make sure the lettuce is dry after washing it using a salad spinner and arrange the lettuce like a crown on a large, pretty round plate.
Spread the figs, dates, pomegranates, walnuts and cranberries over the crown of the salad.
Before serving, prepare the falafel according to the instructions on the packet until it has a crispy texture and a brownish colour. Spread over the salad. Drizzle the dressing over the salad and serve the rest separately.
