Tuna cake
Ingredients:
Dough
3 eggs
1 cup of oil
1 cup of milk
1 cup of wheat flour
1 cup of cornstarch
1 tablespoon of baking powder
1 pinch of salt
Filling
2 cans of canned tuna (drained)
1 medium onion, chopped
1 tomato, chopped (seedless)
1/2 cup of chopped green olives
1/4 cup of chopped chives
Salt and pepper to taste
Preparation:
Preparing the dough: In a blender, beat the eggs, oil, milk and salt until you get a homogeneous mixture. In a bowl, sift the wheat flour, cornstarch and add the baking powder. Mix the dry ingredients with the mixture from the blender, stirring gently until you get a homogeneous dough.
Preparing the filling: In a bowl, mix the tuna, onion, tomato, olives and chives. Season with salt and pepper to taste.
Assembly: Pour half of the batter into a greased and floured pan. Spread the filling evenly over this layer and cover with the remaining batter.
Baking: Bake in a preheated oven at 180°C for approximately 35 to 40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
Finishing: Remove from the oven, let cool slightly and unmold. Cut into slices and serve.
