 Shakshuka (Eggs with tomato sauce) Recipe


Ingredients


2 onions

1 red pepper

1 yellow pepper

1 yellow pepper

4 large tomatoes

6 sprigs of parsley

8 sprigs of coriander

2 tsp cumin

2 tsp paprika

4 eggs

1 pinch of cayenne pepper (optional)

1 sprig of rosemary (optional)

salt

pepper

olive oil

(pimento = bell pepper)



Preparation

Step 1 - Remove the seeds from the peppers and cut into pieces. Cut the onions and tomatoes.

Step 2 - In a large frying pan, sauté the onions with olive oil.

Step 3 - When they are transparent, add the chopped peppers, the chopped parsley and half of the coriander (also chopped). Cover with a lid and leave on medium heat for about 10 minutes.

Step 4 - Add the seasonings and stir. Add the tomatoes. Let it cook for another 20 minutes on medium heat.

Step 5 - Add the 4 eggs (broken). Remember to leave them on one side of the pan. Cover with a lid and let the eggs cook (the yolks should preferably be cooked and still soft).

Step 6 - Finish with the remaining chopped cilantro. Serve while still hot. Enjoy!
