Pasta Salad
Ingredients
250g of cordon blanc or penne (or another type of your preference)
1/2 cup of mayonnaise (you can substitute it with natural yogurt for a lighter version)
1 tablespoon of mustard
1 grated carrot
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1 cucumber, diced (optional)
1/2 cup of sweet corn
1/2 cup of fresh or frozen peas
1/2 cup of mozzarella cheese, diced (or another type of your preference)
Chopped parsley and chives, to taste
Salt and pepper, to taste
A dash of olive oil
Preparation
Cook the pasta in salted water according to the instructions on the package, until al dente. Once ready, drain and rinse in cold water to stop the cooking process and maintain the firm texture.
In a large bowl, mix the cooled pasta with the mayonnaise and mustard, making sure that all the ingredients are well coated in the sauce.
Add the vegetables and cheese, mixing well so that everything is incorporated evenly. Add the parsley, chives, salt, pepper and a drizzle of olive oil for a finishing touch.
Refrigerate for at least 30 minutes before serving. This helps to intensify the flavor and makes the salad even more refreshing.
