Lentils with smoked sausage recipe
Ingredients
1 Morteau sausage/Belle de Morteau (smoked sausage)
500 g green lentils
4 slices of bacon (thick or 8 thin slices)
1 onion
1 clove (small cloves)
1 celery stalk
3 to 4 carrots
bay leaves
thyme
olive oil
1L of water
Materials
A large pan
A small pan
Preparation
Wash the lentils and set them aside. In a small pan, boil the water, then lower the heat, add the bacon slices and let them cook for 4 to 5 minutes.
Drain them and cut them into 3 pieces. In a larger pan, add a dash of olive oil and sauté the bacon slices.
Add the lentils, stick the cloves in the onion and add it to the pan, along with the bay leaves, thyme, sliced carrots and celery. Cover everything with 1 liter of water.
Bring to a boil over high heat. Once it boils, reduce the heat, add the whole sausage and let it cook with a lid on for 25 minutes. Then remove the sausage and cut it into slices.
Also remove the celery, bay leaves and onion.
Now just serve. First the lentils and then the sausage slices on top. PS: if you prefer, mix the lentils with the sausage at the end.
