Delicious Seafood Cataplana
Ingredients
1 medium onion
3 cloves of garlic
1/2 red pepper
Olive oil to taste
60 g unsalted butter
390 g peeled tomatoes
1 bay leaf
Chili pepper to taste
Salt to taste
Pepper to taste
160 ml white wine
400 ml water
300 g mussels
300 g shrimp
250 g monkfish
Coriander leaves to taste
Lemon juice to taste
Preparation

Cover the bottom of the cataplana (or a simple frying pan) with a generous drizzle of olive oil, heat the butter and when the butter has melted, sauté the chopped onion and garlic cloves.

Then add the peeled tomatoes, bay leaf and chili pepper. Season with salt and pepper and cook for 15 minutes.

Break up the tomato with a spoon and add the white wine and water and let it simmer for 10 minutes.

Halfway through cooking, add the mussels, whole shrimp and monkfish. Place a bunch of coriander on top of the seafood cataplana, cover and let it cook for 15 to 20 minutes.
