Delicious Recipe for Soft Dough Pastries
Ingredients
For the soft dough
50 g lard
20 g olive oil
120 g water
300 g plain flour
Salt to taste
For the filling
150 g onion
200 g carrot
30 g olive oil
40 g butter
500 g meat for stewing
50 g white wine (approx. 50 ml)
150 g water
1 beef stock pot
Salt to taste
Pepper to taste
155 g milk
35 g plain flour + flour for sprinkling
Oil for frying
Preparation
1.
Prepare the dough: place the lard and olive oil in the bowl and program for 2 minutes, at 100°C on speed 1.

Next, add the water, flour and salt and program for 30 seconds on speed 6. Let it rest for 1 hour or until cool.

Prepare the filling: add the onion and carrot in pieces and press the Crush function. Use the spatula to scrape down the residue that has accumulated on the sides of the bowl.

Add the olive oil and butter and set for 5 minutes at 120°C on speed 2.

Next, add the meat cut into small pieces, the wine, the water, the beef stock, salt and pepper and set for 25 minutes at 120°C on speed 1.

When the set time is up, remove the lid and let it cool a little. Then, blend for 30 seconds at speed 8.
7.
Add the milk and flour and mix for 1 minute at 95°C on speed 4.
8.
Transfer the mixture to a separate container and refrigerate until cool.
9.
Roll out the dough on a floured surface, cut it into squares with a cutter, place a small portion of the filling on each square and close the pastries. Fry them in plenty of hot oil.
