 Delicious Lemon Cookies


Ingredients


1 basic recipe for shortbread cookies

2 tablespoons fresh lemon juice

1 tablespoon lemon zest





Preparation


Preheat the oven to 190ºC. In a small bowl, mix the flour, baking powder and salt.

In a large bowl, beat the butter and sugar with an electric mixer on medium speed until the mixture is pale and fluffy. Add the egg and vanilla and reduce the speed to low. Add the flour and mix until well incorporated.

Wrap the dough in plastic wrap and refrigerate for at least 4 hours.

Roll the dough into small balls and place on baking sheets lined with parchment paper, keeping some space between them, as the cookies will spread when baking.

Bake for about 15 minutes or until the cookies are golden brown, turning the pans over halfway through. Remove from the oven and let cool for 3 minutes.

Using a metal spatula, place the cookies on a rack and let cool completely.
