 Delicious Gluten-Free Orange Cake with Chocolate Frosting


Ingredients

4 eggs

70 g cornstarch

130 g sugar

1 tsp baking powder

juice and zest of 1 small orange

FOR THE CREAM:

400 g sweet potato puree

2 tbsp honey

70 g Nesquik Extra Choc





Preparation


Preheat the oven to 180ºC. Line a 25cm x 25cm baking tray with baking paper and set aside.

Separate the egg yolks from the egg whites and beat the latter until stiff. Set aside.

In another bowl, beat the sugar and egg yolks for 5 minutes until fluffy. Add the cornstarch and baking powder. Mix well. Add the orange juice and zest and mix a little more.

Finally, add the beaten egg whites, mixing everything very well. Place the mixture on the baking tray and bake for about 25 minutes. Remove and unmold after 15 minutes. Cut the square cake into 2 equal parts. Set aside.

Wash the sweet potatoes well and cut into slices, even with the skin on. Boil in hot water for about 30 minutes or until cooked. Remove from the water and discard the skin. Using a potato masher or a food mill, mash the potatoes. Weigh 400 g of the mash to prepare the cream.

In a blender or food processor, place the sweet potato mash, honey and Nestlé Nesquik Extra Choc. Mix everything very well.

Put half of the cream on one of the cake parts. Then arrange the remaining cake on top of the cream and finish with the remaining cream. Decorate as desired and with orange zest.
