Delicious Cod and Shrimp Croquettes
Ingredients
115 g Mashed Potatoes
450 g of shredded soaked cod
200 g of peeled shrimp
400 g of onion
4 eggs
300 ml of water
200 ml of semi-skimmed milk
3 tablespoons of olive oil
salt to taste
breadcrumbs
flour
oil for frying
Preparation
Cut the shrimp into small pieces.
Fry the chopped onion with 3 tablespoons of olive oil for approximately 10 minutes. When the onion is transparent and before it starts to brown, add the cod and shrimp and cook for about 5 minutes. Strain, pressing to remove excess liquid. Set aside.
Prepare the mashed potatoes with 300 ml of water, 200 ml of milk and a pinch of salt. Mix the puree with the cod, shrimp and onion. Add salt if necessary. Place the mixture in a container covered with cling film and refrigerate for 2-3 hours.
Form the croquettes with your hands and coat them in flour, beaten egg and breadcrumbs. Coat them again in beaten egg and breadcrumbs.
Fry in very hot oil. Place the croquettes on kitchen paper to absorb the excess oil.
