Codfish in Parchment Paper Recipe
Ingredients
1 tablespoon olive oil
150 g fresh codfish
1 tomato
1 potato (peeled)
1/2 red onion
1/2 clove garlic
fresh parsley
salt
pepper
Preparation
Step 1 - Wash and cut the tomato, potato and onion into thin slices.
Step 2 - Cut a large square of parchment paper. Pour a little olive oil over the paper. Always in the center: then place the potato slices on top. Then the sliced tomatoes.
Step 3 - Place the fish on top of the tomatoes and then the onion. Sprinkle with chopped parsley. Season with salt and pepper.
Step 4 - Close the parchment paper: fold the paper and close it gradually like a calzone (half-moon shape). It should be well sealed.
Step 5 - Bake for 30 minutes at 180°C. Remove from the oven, open it and serve with freshly chopped parsley.
Step 6 - It's ready. Enjoy!
