 Chocolate and Olive Oil Mousse with Walnuts Recipe


Ingredients


160 g of 70% Dark Chocolate

5 eggs

50 g of brown sugar

5 tbsp of olive oil

1 tsp of fine salt

chopped walnuts to taste





Preparation


Start by breaking the chocolate into smaller squares. Place in a bowl and place in a bain-marie over low heat until the chocolate melts. Stir occasionally.


Separate the egg yolks from the whites and beat the latter until stiff, adding the fine salt halfway through the process. Set aside.


When the chocolate is completely melted, remove from the heat and add the olive oil, stirring well until incorporated. Allow to cool slightly.


Add the sugar to the egg yolks and beat well with an electric mixer for 3 to 5 minutes, until the mixture is fluffy.


Then add the chocolate and mix well. Add the egg whites, mixing everything very carefully. Divide into individual bowls and refrigerate until serving. Then sprinkle with chopped nuts and serve.
