Recipe for Kale and Bean Rice with Salted Pork 🥬🥬🫘🫘🍖🥓
To prepare a delicious kale and bean rice with salted pork:
Ingredients:
1 cup of rice
1 cup of cooked beans (carioquinha or black beans)
250g of salted pork (such as ribs or belly, previously desalted)
1 bunch of finely chopped kale
1 chopped onion
2 chopped garlic cloves
Oil or olive oil to taste
Salt and black pepper to taste
Cherries to finish (optional)
Preparation:
Fry the desalted pork until golden brown and some of the fat is released. Remove and set aside.
In the same oil, sauté the onion and garlic until golden brown, then add the rice and sauté for a few minutes.
Add the beans with a little broth and mix. Return the pork to the pan.
Add water to cover the rice, season and cook until the rice is almost ready.
Add the kale and mix lightly. Cook for a few more minutes until the kale wilts and the rice is well cooked.
Finally, garnish with parsley, if desired, and serve straight from the pan to maintain the rustic touch.
