Portuguese Pork Recipe
Ingredients:
800g of diced pork (loin or leg)
2 tablespoons of olive oil
4 cloves of minced garlic
1 bay leaf
2 teaspoons of paprika
200 ml of dry white wine
300g of diced potatoes
300g of clams (optional)
Salt and pepper to taste
Fresh parsley and olives for garnish
Preparation:
Marinade: In a bowl, mix the white wine, minced garlic, bay leaf, paprika, salt and pepper. Add the pork and let marinate for at least 1 hour (to intensify the flavor, it is best to marinate overnight).
Cooking the Meat: Heat the olive oil in a large pan and brown the pieces of meat over medium-high heat. When they are golden brown, add the marinade and cook until the meat is tender and the liquid has reduced, forming a thick sauce.
Cook the Potatoes: In a separate pan, cook the potatoes in salted water until tender. Drain and set aside.
Add the Clams: If using clams, add them to the pan with the meat, cover and cook until they open. This touch adds a maritime flavor and complements the dish.
Finish the Dish: Add the cooked potatoes to the pan with the meat and mix well. Adjust the salt and pepper if necessary.
Serve: Transfer to a serving dish and garnish with chopped fresh parsley and olives. Serve with Portuguese bread and wine.
