 Tomato Rice Recipe 🍅🍅🍅


Ingredients:


1 cup of rice

4 chopped ripe tomatoes (or 1 can of peeled tomatoes)

1 medium onion, chopped

2 cloves of garlic, chopped

2 tablespoons of olive oil

1 bay leaf

Salt and pepper to taste

3 cups of vegetable broth or water

Fresh parsley for garnish





Preparation:


In a pan, heat the olive oil and sauté the onion and garlic until lightly browned.

Add the chopped tomatoes and bay leaf, cooking until the tomatoes break down and form a sauce.

Add the rice and stir so that it absorbs the flavor of the sauce.

Add the vegetable broth or water and season with salt and pepper.

Cook over low heat, with the pan half covered, until the rice is soft and has absorbed all the liquid (about 15-20 minutes).

Finish with fresh parsley and serve hot.

This simple recipe has a rustic and comforting flavor, ideal to accompany meat, fish or even as a main dish.
