 Peach pie recipe 🍑🍑🍑


Ingredients:


Dough:


200g wheat flour

100g cold butter (cubed)

50g sugar

1 egg

1 pinch of salt






Filling:


5 ripe peaches (peeled and sliced)

100g sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch (to thicken the peach juice)

Apricot jam (to brush on top)


Preparation:


Dough: In a bowl, mix the flour, sugar and salt. Add the butter cubes and mix with your hands until it forms a coarse crumble. Add the egg and mix until it forms a homogeneous dough. Shape the dough into a ball, wrap it in plastic wrap and let it rest in the refrigerator for 30 minutes.


Filling: Mix the peach slices with the sugar, lemon juice, vanilla and cornstarch. Let it sit for 15 minutes so the peaches release some juice.


Assembly: Roll out the dough and line a tart pan with a removable bottom. Arrange the peach slices in neat circles on the dough.


Baking: Bake in a preheated oven at 180°C for about 35-40 minutes, or until the dough is golden brown and the filling is bubbling.


Finishing: After baking, brush the peach slices with the apricot jam to give them a shine.


Serve the tart while still warm, accompanied by a scoop of vanilla ice cream or whipped cream.
