Fish Skewers with Prawns Recipe 🍤🦐😊
Ingredients:
400g of fish (can be sea bass, dorado or other firm white fish), cut into cubes.
200g of large prawns (shrimp), peeled and cleaned.
1 red bell pepper, cut into cubes.
1 zucchini, sliced into thick rings.
1 red onion, cut into large pieces.
Extra virgin olive oil.
2 cloves of minced garlic.
Juice of 1 lemon.
Salt and black pepper to taste.
Chopped fresh parsley leaves for garnish.
Preparation:
In a bowl, season the fish cubes and prawns with garlic, olive oil, lemon juice, salt and pepper. Let marinate for 15-20 minutes.
Assemble the skewers alternating the fish cubes, prawns, bell pepper, zucchini and onion.
Preheat your grill or barbecue to medium-high heat. Brush the skewers with olive oil.
Grill the skewers for about 3-4 minutes on each side, until the fish is cooked through and the prawns are golden brown, turning them over to cook on all sides.
Serve with a squeeze of lemon and chopped fresh parsley.
These skewers are perfect for an outdoor barbecue, packed with flavor and a great combination of seafood and vegetables.
