Coconut Cake Recipe 🥮🍥🍰
Ingredients:
For the cake:
3 eggs
2 cups of sugar
2 cups of wheat flour
1 cup of milk
1/2 cup of oil
1 tablespoon of baking powder
1 cup of grated coconut (fresh or dried)
For the syrup:
1 cup of coconut milk
1/2 cup of condensed milk
1/2 cup of grated coconut for sprinkling
Preparation method:
Preheat the oven to 180°C. Grease and flour a medium-sized pan.
Mix the liquid ingredients: In a large bowl, beat the eggs with the sugar until it forms a light and fluffy cream. Add the oil and milk and mix well.
Add the dry ingredients: Add the wheat flour little by little, stirring gently with a spatula to avoid lumps. Incorporate the baking powder and grated coconut, mixing gently until all the ingredients are well incorporated.
Bake the cake: Pour the batter into the prepared pan and bake for approximately 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
Prepare the syrup: While the cake is baking, mix the coconut milk and condensed milk in a small bowl. Set aside.
Finish the cake: As soon as the cake comes out of the oven, while it is still hot, poke holes in the top with a fork and pour the syrup over it, allowing it to soak in. Sprinkle the shredded coconut on top for a perfect finish.
Cool and serve: Wait for the cake to cool completely before cutting it into generous slices and serving. This cake is perfect for an afternoon coffee or for entertaining guests with a special touch.
