Classic Stewed Squid Recipe 😊😊
Ingredients:
1 kg of cleaned squid (body and tentacles)
4 tablespoons of olive oil
1 large chopped onion
3 cloves of minced garlic
1 chopped red bell pepper
4 chopped ripe tomatoes (or 1 can of peeled tomatoes)
1/2 cup of dry white wine
1 bay leaf
1 teaspoon of sweet paprika
Salt and black pepper to taste
1 tablespoon of chopped fresh parsley (to finish)
Preparation:
Cut the squid into rings and reserve the tentacles whole. Dry well with paper towels to prevent them from releasing too much water in the pan.
In a large pan, heat the olive oil over medium heat and sauté the onion until translucent. Add the garlic and bell pepper, cooking for another 3 minutes.
Add the chopped tomatoes and cook until they break down and form a thick sauce. Season with salt, black pepper and paprika.
Add the squid and mix well so that they are coated in the sauce. Cook for 5 minutes, stirring occasionally.
Pour in the white wine and add the bay leaf. Cover the pan and cook over low heat for 20-25 minutes, until the squid is tender.
Finally, garnish with chopped parsley and serve with white rice, rustic bread or boiled potatoes.
