Chestnut cake recipe 😊


Ingredients:


2 cups of Brazil nuts or cashew nuts (you can vary with the ones you like the most)

1 ½ cups of sugar

3 eggs

½ cup of milk

1 cup of wheat flour

1 tablespoon of baking powder

1 pinch of salt

100g of butter (at room temperature)

1 teaspoon of vanilla essence (optional)





Preparation method:


Toasting the chestnuts: Start by toasting the chestnuts to intensify the flavor. Simply place them in a dry frying pan over low heat and stir occasionally until they turn golden brown. Be careful not to burn them! After toasting, let them cool and grind them in a food processor, leaving small pieces, but not too fine – this way you preserve the crunchiness of the cake.


Preparing the dough: In a mixer, beat the butter with the sugar until it forms a light and fluffy cream. Then add the eggs, one by one, beating well after each addition. Add vanilla extract to add an extra layer of flavor (if using).


Incorporating the nuts: Mix the flour, crushed nuts, and salt in a separate bowl. Gradually add this mixture to the butter and egg mixture, alternating with the milk. Do this slowly, always mixing with a spatula or whisk to ensure that everything is combined evenly.


Finishing: Finally, add the baking powder and mix gently, just until it is incorporated into the batter.


Baking: Preheat the oven to 180°C. Grease and flour a medium-sized pan (round or rectangular). Pour the batter into the pan and bake for about 40-45 minutes, or until the cake is golden brown and passes the toothpick test (when inserted into the center of the cake, it should come out clean).


Waiting for the cake to cool: As soon as it comes out of the oven, wait a few minutes before unmolding it. Serve with a dusting of powdered sugar or, if you prefer something more indulgent, a creamy dulce de leche to accompany each slice.


When you cut into the first slice, the smell of chestnuts will still be strong in the air. The inside of the cake, slightly moist and with crunchy bits, is perfect to enjoy with a cup of coffee or tea. A simple recipe, but full of flavor and personality.
