Imagine yourself in a kitchen bathed in afternoon sunlight, with the aroma of sautéed garlic filling the room. Today, we're going to prepare a dish that's simple but full of flavor: spaghetti with shrimp. It's the perfect combination of al dente pasta with succulent shrimp and a light, fragrant sauce.


Ingredients:


250g spaghetti

300g medium shrimp (cleaned and peeled)

4 cloves minced garlic

1 chili pepper, seeded and chopped (optional)

3 tablespoons olive oil

1/2 cup dry white wine

1/2 cup cherry tomatoes, halved

Juice of 1/2 lemon

Fresh chopped parsley to taste

Salt and black pepper to taste

Grated Parmesan cheese (optional, to serve)





Preparation:


Cook the spaghetti: In a large pot of boiling salted water, cook the spaghetti until al dente, following the package instructions. Reserve one cup of the cooking water and drain the pasta.


Prepare the shrimp: While the pasta is cooking, heat two tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and chili pepper (if using) and sauté for about 1 minute, until the garlic begins to brown slightly.


Cook the shrimp: Add the shrimp to the pan, season with salt and pepper to taste, and sauté for 2-3 minutes on each side, or until pink and cooked through. Remove the shrimp from the pan and set aside.


Make the sauce: In the same pan, add the white wine and scrape the bottom to release any trapped flavors. Allow the wine to reduce by half, which should take about 2 minutes. Then add the cherry tomatoes and cook for another 2-3 minutes, until they begin to soften.


Finish the dish: Return the shrimp to the pan, add the lemon juice, and mix well. Add the cooked spaghetti and a ladle of the reserved cooking water. Stir well so that the sauce coats all of the pasta. Adjust the salt and pepper if necessary.


Serve: Transfer the spaghetti with shrimp to individual plates, drizzle with the remaining olive oil, sprinkle with chopped fresh parsley and, if desired, top with grated Parmesan. Serve immediately.
