Portuguese Codfish 🐠🦈😊❤️

 Portuguese Codfish is a delicious and traditional dish of Portuguese cuisine.


Ingredients:


1 kg of desalted cod

600 g of potatoes

4 cloves of minced garlic

1 sliced ​​onion

2 bay leaves

1 large red pepper, sliced ​​

3 medium tomatoes, sliced ​​

2 eggs

½ cup of olive oil

Salt and black pepper to taste





Step by step:


Place the desalted codfish in a pan, add the eggs and cover with water. Cover and let boil for 5-10 minutes. Do not drain the water, let the codfish and eggs cool in the pan.

Cook the potatoes until they are soft, but still firm. You can peel them and cut them into slices or cook them whole with the skin on.

Drain the water from the codfish and shred the fish, removing the skin and bones. Peel the eggs and cut into slices. Preheat the oven to 200°C.

In a large pan, add the olive oil, bay leaves, onions and garlic. Sauté until the onion is soft.

Add the seeded bell pepper and cook for 1-2 minutes, stirring occasionally. Add the tomatoes, mix and cook for another 2-3 minutes.

Turn off the heat and the stew is ready, which will give even more flavor to the cooked Portuguese cod!

In a baking dish, layer the shredded cod, boiled potatoes, eggs, and the onion and bell pepper stew. Drizzle with olive oil and bake for a few minutes to heat.
