To prepare a delicious pineapple mousse, we will combine the refreshing acidity of the fruit with the smooth creaminess of the cream and the lightness of the whipped cream. This dessert is perfect for hot days and very simple to make. Let's go to the detailed step by step!


Ingredients:

1 can of pineapple in syrup (400g)

1 can of condensed milk (395g)

1 can of cream without whey (300g)

1 packet of colorless, unflavored gelatin (12g)

1 cup of water (to hydrate the gelatin)

200 ml of whipped cream already whipped (optional, for a lighter mousse)

Mint leaves for decoration (optional)

Preparation method:

Prepare the pineapple:


Open the can of pineapple in syrup and drain the liquid. Set aside a few slices for decoration, if desired.

Cut the remaining pineapple into small pieces and set aside.

Rehydrate the Gelatin:





In a small bowl, place the colorless gelatin and add the cup of water. Stir well so that the gelatin hydrates evenly.

Let it sit for about 5 minutes. After this time, heat in the microwave for approximately 15 seconds or until the gelatin is completely dissolved. Be careful not to let it boil!

Mix the Main Ingredients:


In a blender, add the condensed milk, the cream (without the whey) and the dissolved gelatin. Blend for approximately 1 minute until you obtain a homogeneous mixture.

Add the pineapple pieces and pulse a few times so that the pineapple is evenly distributed, but still leaves some pieces in the mixture for a more interesting texture.

Add the Chantilly (optional):


If you want a more airy and light mousse, gently incorporate the whipped whipped cream into the blender mixture, using a spatula. Mix from the bottom up to maintain the volume of the whipped cream.

Assembly and Refrigeration:


Distribute the mousse into individual glasses or a large serving dish, as preferred.

Refrigerate for at least 4 hours, or until the mousse is firm and well chilled.

Finishing:


When serving, garnish with the reserved pineapple slices and mint leaves, if using.

Tips:

Fit Version: Replace the condensed milk with a light version and the cream with skimmed Greek yogurt. The flavor will be just as delicious, but with fewer calories.

Special Touch: Add a touch of rum or coconut liqueur to the blender mixture for an extra tropical flavor.

Varied Texture: For an interesting contrast of textures, you can add caramelized pineapple pieces on top of the mousse before serving.
