Chicken Breast with Tomato Sauce 🍗🍅😊

To prepare a delicious grilled chicken breast with tomato sauce, you will need a few basic ingredients, but the secret is in the way the flavors combine to create a succulent and aromatic dish. Here is a recipe that will make your mouth water!

Ingredients

For the chicken:

3 chicken breasts

Salt and black pepper to taste

2 cloves garlic, minced

Juice of 1 lemon

1 tablespoon olive oil

1 teaspoon paprika (optional)

For the tomato sauce:

4 ripe tomatoes, chopped

1 medium onion, chopped

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon sugar (to reduce the acidity of the tomatoes)

Salt and black pepper to taste

1 teaspoon dried oregano or basil

1/4 cup fresh basil leaves (optional)

Directions

Prepare the chicken: Start by seasoning the chicken breasts. Place the chicken breasts on a large plate and season with salt, black pepper, minced garlic, lemon juice, olive oil, and paprika (if using). Massage the seasonings into the chicken breasts and let marinate for at least 30 minutes in the refrigerator. This helps the meat absorb all the flavors, making it more juicy and flavorful.

Grilling the Chicken: Heat a grill or large skillet over medium-high heat. If using a skillet, add a little olive oil to prevent the chicken from sticking. Once the grill is hot, add the chicken breasts and grill for about 5 to 7 minutes on each side, or until the chicken is cooked through and a nice golden color. The time may vary depending on the thickness of the chicken breasts. To ensure the chicken is cooked through, you can cut a piece of chicken to check that the inside is white and juicy.

Preparing the Tomato Sauce: While the chicken is grilling, prepare the tomato sauce. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2 to 3 minutes, until translucent. Then add the minced garlic and sauté for 1 more minute, until fragrant. Add the chopped tomatoes and sugar (to reduce the acidity) and cook for about 10 minutes, stirring occasionally, until the tomatoes break down and the sauce begins to thicken. Season with salt, black pepper, oregano or dried basil.

Finishing the Dish: Once the sauce is ready, reduce the heat and add the fresh basil leaves (if using). Stir well and let the sauce absorb the basil flavors for a few more minutes.

Serving: Place the grilled chicken breasts on a serving plate and generously top with the tomato sauce. Garnish with a few fresh basil leaves for a finishing touch. Serve immediately, accompanied by fluffy white rice or a green salad.

Tips:

For a special touch, you can add a pinch of Calabrian chili pepper to the tomato sauce for a spicy flavor.

If you prefer a smoother tomato sauce, you can puree the tomatoes in a blender before adding to the pan.

Try adding a little grated Parmesan cheese on top of the chicken before serving for an even richer flavor.

Enjoy!
