Ingredients:


For the cake:


2 cups of wheat flour

1 1/2 cups of sugar

1/2 cup of butter (at room temperature)

1 cup of milk

3 eggs

1 tablespoon of baking powder

1 teaspoon of vanilla extract

1 pinch of salt


For the cherry filling and topping:


2 cups of fresh or frozen cherries (pitted)

1/2 cup of sugar

1 tablespoon of cornstarch

1/4 cup of water

1 teaspoon of lemon juice

Instructions:

Preparing the cake:







Preheat the oven to 180°C and grease a cake pan (preferably with a hole in the middle) with butter and flour.

In a large bowl, beat the butter and sugar until light and fluffy. This will take about 3 to 4 minutes.

Add the eggs one at a time, beating well after each addition. This helps to incorporate air into the batter, making the cake lighter.


Add the vanilla extract and mix well.


In another bowl, sift the flour with the baking powder and salt. Add this mixture to the butter mixture, alternating with the milk, beginning and ending with the flour. Mix gently until the batter is smooth.


Pour the batter into the prepared pan and bake for about 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.


Let the cake cool in the pan for 10 minutes before unmolding and transferring to a cooling rack.


Preparing the cherry filling and frosting:


In a saucepan, combine the cherries (if frozen, thaw first), sugar, cornstarch, water, and lemon juice.


Cook over medium heat, stirring constantly, until the mixture begins to boil and thicken. This should take about 5 to 7 minutes.


Reduce the heat to low and continue cooking for 2 more minutes, until the cherries are soft and the filling has a thick, glossy consistency.

Remove from the heat and let cool.

Assembling the cake:


Once the cake has cooled completely, cut it in half horizontally to create two layers.

Spread some of the cherry filling over the bottom layer and top with the other half of the cake.
