Carne vinai d’alhos

Carne vinai d’alhos is a traditional dish from Madeira Island, known for its strong flavor and characteristic seasoning. Here is the recipe with details and images to help you prepare it!


Ingredients:


1 kg of pork (preferably loin or leg)

6 cloves of minced garlic

3 bay leaves

1 tablespoon of red pepper

1 teaspoon of black pepper

2 tablespoons of paprika paste

500 ml of dry white wine

200 ml of wine vinegar

Salt to taste

Olive oil for frying





Preparation:


Marinade:

Cut the pork into medium pieces and place them in a large bowl. Add the minced garlic, bay leaves, red pepper, black pepper, paprika paste, white wine, vinegar and salt. Mix well, making sure all the pieces of meat are covered in the marinade. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least 24 hours, so that the meat absorbs the flavors well.


Frying:

After marinating, remove the pieces of meat and reserve the marinade. Heat a generous amount of olive oil in a large frying pan and fry the pieces of meat until golden brown on all sides. If necessary, do this in batches so that the meat does not crowd together in the pan.


Finishing:

After frying all the meat, add the marinade to the pan and cook over medium heat until the liquid has reduced and the meat is tender and flavorful. This should take about 30-40 minutes.


Serving:

Serve the carne vinai d’alhos accompanied by boiled potatoes, fried corn or homemade bread. It is a dish that goes perfectly with a glass of red Madeira wine.
