Pineapple and Lime Carpaccio with Coconut 🍍🥥🎅🎄


Ingredients


1 ripe pineapple

2 limes (juice and zest)

165 g coconut cream

60 g of vegetable yogurt

Mint q.s.





Preparation


Peel the pineapple, remove the core and cut it in half lengthwise.



With a very sharp knife, slice it as thin as you can.



Arrange the slices on a platter and sprinkle them with the zest of 1 lime.



Drain the liquid part of the coconut cream and place the pasty part in a bowl.



Add the juice of ½ lime and yogurt and mix.



Spread spoonfuls of the coconut cream and very cold yogurt over the pineapple.



Sprinkle with mint and decorate with the remaining sliced lime.
