Onion Cod 🐟🎅🎄


Ingredients:


4 cod fillets

800 g of potatoes

2 onions

3 cloves of garlic

1 dl of tomato pulp

2 dl of olive oil

2 tablespoons of vinegar

1 bay leaf

Olives q.s.

Coriander q.s.

Salt and pepper q.s.

Flour for passing

Frying oil

Fried cod





Preparation:



Soak the cod fillets in water in good time. On the day, dry them with a kitchen towel and set them aside.

Peel and wash the onions and garlic cloves, cut the onions into thin half moons and chop the garlic. Peel and wash the potatoes, cut them into wedges, fry them in oil and then drain them.

Heat a frying pan with olive oil, let it heat up, coat the cod fillets in flour, add them to the frying pan and let them fry on both sides. Remove and reserve the cod.

Pour out half the oil from the frying pan, add the onion, garlic and bay leaf and cook until everything turns golden.

Then add the tomato pulp, season with salt and pepper, let it cook a little more until it becomes soft, pour over the vinegar, mix and let it boil.

Add the cod again, mix, remove from the heat, place on a platter, add the fried potatoes, garnish with olives and chopped coriander and serve.
