Broccoli and Tuna Soufflé 🎄☺️🎄
Ingredients
400 g of broccoli
350 g of milk
75 g unbleached flour
60 g butter at room temperature + butter for greasing
Salt to taste
Pepper to taste
Nutmeg to taste
6 eggs
120 g tuna in olive oil
200 g grated Emmental cheese
Preparation
Wash and separate the broccoli into small florets. Drain them, place them in the bowl and chop for 30 seconds on speed 5. Check that they are well crushed and, if necessary, use the spatula to remove what has accumulated on the walls of the bowl and grind for a few more seconds at the same speed. remove and reserve.
In a clean, dry mixing bowl, add the milk, flour, butter, salt, pepper and nutmeg to taste and mix for 10 seconds at speed 5.
Then, program 15 minutes at 95ºC at speed 3. Add the yolks (reserve the whites) and mix for 30 seconds at speed 4.
Add the reserved broccoli and well-drained tuna, setting for 30 seconds on speed 4. Adjust the seasoning, if necessary. Add the grated cheese and program 30 seconds at speed 4. Remove to a large bowl, set aside and let cool.
In the clean and very dry glass, insert the mixer onto the blade. Add the egg whites and a pinch of salt and program 6 minutes at speed 4.

Using a spatula, gently incorporate the egg whites into the reserved and cooled mixture (do not beat so as not to liquidize the soufflé). Grease a large soufflé mold with butter and place in a preheated oven at 200ºC for around 30-40 minutes. Serve immediately.
