Carrot Cake with Cream Cheese Frosting 🥕🍰


Ingredients:

 

3 carrots

3 eggs

½ cup of sunflower oil

1 natural yogurt

3 cups of brown sugar

3 cups of flour

1 spoon. cinnamon tea

1 spoon. yeast tea for cakes

1 package of cream cheese

100g powdered sugar

juice and zest of half an orange





Preparation:

 

Grate the carrots. In a tall container, place the carrot, eggs, oil and yogurt. Blend everything with a hand blender until you get a homogeneous mixture.

Sift the flour with the baking powder and cinnamon into a bowl and mix in the sugar.

Pour in the carrot mixture and mix very well without beating.

Pour the mixture into a round, well-greased and dusted mold.

Bake in a preheated oven at 180º for +- 45 minutes or until a toothpick comes out clean.

Let the cake cool before covering.

For the topping, mix the cream cheese with the powdered sugar and then the orange juice and zest. Mix well until creamy.

Decorate to taste, I used orange zest, orange and mint.
