 Roasted turkey in the oven with rice 😊🦃🦃


Ingredients


1 turkey

1 kg salt

2 lemons

For the filling:

250 g wheat bread

3 eggs

100 gr streaky ham

1 tablespoon butter or lard

salt qb

pepper qb

For the rice:

1 kg needle rice

Turkey offal wings, legs, neck, gizzards, liver

1 onion

3 tablespoons olive oil

salt qb

pepper qb






Instructions


After the turkey is prepared and well cleaned, the wings, legs and neck are cut.

Place the legs in the belly and place the turkey in a bowl covered with cold water, salt (1kg) and sliced lemons.

Leave it like this overnight.

The next day, drain and dry with a cloth so that it is completely dry.

Using salt, rub it all over the turkey.

Separately, in a bowl, cut the bread into pieces and cover with the eggs.

Add the ham cut into small pieces and the butter (or lard).

Fill the turkey breast with this mixture, tamping it down so that it is well filled, and sew up the opening with a needle and thread.


Preparation of the rice syrup:


Cook the wings, neck, legs and giblets of the turkey in water. Season with salt.

Choose, wash and measure the rice.

Chop the onion and brown it with the oil.

Add the syrup used to cook the giblets (one and a half times the volume of the rice) and let it boil.

Add the rice, let it boil a little and pour it into a low clay pot, on top of which you will place a net where the turkey will roast for 1.30 hours. Of course, this process refers to cooking in a wood oven.

In an electric or gas oven, the height of which is not sufficient for the pan and turkey as a whole, roast the turkey, then add the juices that drain from it while the turkey is roasting to the rice.

In this case, the baking time will be two hours.
