ingredients


10 plums, washed and pitted (you can keep the skin if you wish)

1 tablespoon cider vinegar

3 tablespoons of red port wine

5 tablespoons of butter

6 tablespoons + 120 g brown sugar

3 eggs

Zest of 1/2 orange

100g almond flour

2 tablespoons of wheat flour

1 teaspoon of yeast





Preparation


1. Start by cutting the plums into segments and leaving them to macerate, in a bowl, with cider vinegar, Port wine and brown sugar. Reserve.

2. Place a large, oven-proof casserole dish on the heat with 4 tablespoons of butter. Add 6 tablespoons of brown sugar and let it reach a caramelized texture.

3. In a large bowl, beat the whole eggs and then fold in the almond flour. Add the rest of the sugar and mix.

4. Add 2 tablespoons of wheat flour and incorporate.

5. When the caramel is ready, add the macerated plum segments to the bottom of the casserole, decorating as desired.

6. Add the yeast to the egg and flour mixture and mix.

7. Add a tablespoon of butter and a pinch of salt and mix.

8. Pour the mixture into the pan, from the edges towards the center, so as not to ruin the arrangement of the plums.

9. Place the casserole in the preheated oven at 180ºC for about half an hour.

10. Remove the pie from the oven and carefully turn it out of the pan onto a plate, using a cloth.
