Malandrinho Seafood Rice 🍹😊


Ingredients


600 g shelled shrimp

100 g zebra clam kernels

150 g of mussel kernels

150 g of crab sticks

400 g shelled clams

400 g peeled and chopped tomatoes

500 g carolino rice

1 dl of olive oil

1 big onion

3 cloves of garlic

2 stems of fresh coriander

white pepper q.b.

chilli sauce q.b.

salt to taste

chopped fresh coriander q.s.





Preparation


Peel the prawns, leaving some with the shell to decorate. Bring to the boil, in a pan with 1.5 l of water, the shrimp shells, salt and a little chilli sauce. Let it boil for 15 minutes, grind everything and pass through a fine mesh strainer.

Finely chop the onion and garlic cloves, place them in a pan with boiling oil and cook until the onion is soft. Add the chopped peeled tomato and 1 dl of water, letting it cook over low heat for 5 minutes.

Add the unpeeled clams and coriander stems to the stew, season with salt and pepper and cook for another 5 minutes.

Add a little of the shrimp cooking water and let it cook a little, then add the rest of the water and let it boil.

Add the rice, stir until it boils and cook for 8 minutes. Add the shrimp, clams and cockles and the prawns that you kept with the shell, boil for another 7 minutes, adding more water if necessary. Add the crab sticks, cut into thick slices, check the salt, pepper and chilli.

When the rice is cooked, bearing in mind that this should be a dish with plenty of sauce, turn off the heat and sprinkle with chopped fresh coriander.
