 Carrot and Orange Cake with Chocolate Icing 🍰🍰😊


Ingredients


FOR MASS:


2 medium carrots

1 orange

4 c. coconut oil soup

3 eggs

2 cups of wheat flour

1 c. yeast dessert

50 g of almonds

1/2 cup brown sugar


TO THE ROOF:

200 g Dark Chocolate

1 c. of butter soup or vegetable cream

1/2 cup coconut milk (cow's milk can be substituted)





Preparation


Preheat the oven to 180ºC.

Grease a cake tin, line with parchment paper and grease again.

Grate the carrots, scrape the orange peel and reserve the zest for the cake topping. Discard the seeds and the white part of the orange peel and break it into pieces.

Chop the almonds in a food processor and set aside.

Beat the carrots, orange, coconut oil, eggs and sugar in a blender.

In a large container combine the flour, baking powder and crushed almonds, add the mixture from the blender and mix until obtaining a homogeneous mass.

Place the dough in the mold and bake for 35 minutes or until the inside is dry.

For the frosting: Break the chocolate into small pieces and place in a bowl with the butter.

Heat the milk and when it is almost boiling, add it to the chocolate and butter and stir until completely melted. Pour this creamy frosting over the cake.

Sprinkle the cake with the orange zest.
