Grated Carrot Cake


Ingredients:

(240ml cup)


4 medium carrots

4 eggs

2 cups of sugar

2 cups of flour

1 teaspoon yeast

3/4 cup of oil






Preparation:


Grease a mold with butter and sprinkle with flour.

Preheat the oven to 170º

Separate the yolks from the whites and beat the latter until stiff. Reserve.

Grate the carrots into a mixing bowl. Add the yolks, sugar and oil, and beat very well. Add the sifted flour and yeast. Beat at low speed to mix well. Add the egg whites and fold in.

Pour into the tin and bake for approximately 50 minutes, or until a skewer comes out clean.
