Chicken in the oven
Ingredients
1 carrot
1 tomato
1 onion
2 garlic cloves
900 g of chicken thighs
1 bay leaf
1 dl of dry red wine
10 g of Sical Papua New Guinea (diluted in water)
1 dl of water
1 kg of potatoes
1/2 dl of olive oil
100 ml of cream
Preparing chicken in the oven
Peel and cut the carrot, tomato and onion into cubes and slice the garlic. Set the oven to 200°C. Place these ingredients in a bowl and add the chicken, parsley, bay leaf and wine. Season with salt, add the coffee and let it taste.
Place the previous preparation in a refractory container. Peel the potatoes, cut them into wedges and add them to the chicken in the ovenproof dish. Drizzle with oil; season with salt and bake in the middle of the oven for 20 minutes.
Finally, remove the chicken roast from the oven and add the oregano and cream. Put it back in the oven for 20 minutes. Once the time is up, remove and sprinkle with parsley. Adjust seasonings and serve.
