 Oven Roasted Snapper



Ingredients:

1 snapper weighing about 1.3 kg
600g of peeled potatoes for roasting
12 chives
1 large ripe tomato cut into thin slices
½ red pepper cut into strips
½ green pepper cut into strips
6 cloves of garlic crushed with skin
4 bay leaves
1 sprig of parsley
Sweet chili powder
250 ml of white wine
Olive oil
1 tablespoon of butter
salt

Preparation:

1. Season the fish on both sides with salt, pepper and sweet pepper.

2. In a baking tray, add enough oil to cover the bottom.
On top, spread the tomato, half the peppers, sprigs of parsley, bay leaves and crushed garlic.
On top, place the fish.

3. In a bowl, place the potatoes and spring onions.
Season with salt, sweet pepper and pepper.
Drizzle with olive oil and mix everything well.

4. Spread potatoes and spring onions around the fish.
On top, spread the remaining peppers.
Drizzle everything generously with oil and put the butter over the fish.
Finally, add the white wine.

5. Place in a preheated oven at 200ºC and bake for 40 to 50 minutes.
When everything is well cooked and the potatoes are golden, remove.
