Steak with Madeira Sauce and Mushrooms


Ingredients:

2 sirloin or empty steaks
180g of sliced ​​Portobello mushrooms
2 crushed garlic cloves with skin
1 bay leaf
50g of butter
1 small chopped onion
125 ml of Madeira wine
180 ml of beef broth
15g of unleavened wheat flour (1 teaspoonful)
1 teaspoon Worcestershire sauce
Salt q.s.
Pepper q.s.

Preparation:

1. Start by making the sauce.
In a pan, heat half the butter and onion.
Stir and cook until the onion turns golden.

2. When sautéing, add the flour and stir very well.
Gradually and while stirring, add the broth, Worcestershire sauce and Madeira wine.
As soon as it starts to boil, remove.
Strain the sauce into a fine net.

3. Season the meat with a little salt, taking into account that the sauce is already salty and peppery.
In a skillet, heat the remaining butter, garlic and bay leaf.
Let it heat up very well.

4. Fry the steaks on both sides, 1 to 4 minutes on each side, depending on how you want it lightly, medium or well done.
After the steaks are fried, remove them to a plate with absorbent paper and discard the garlic and bay leaf.

5. To the remaining fat, add the mushrooms and sauté until they run out of water.
Finally, add the sauce and let it simmer over a low heat for approximately 2 minutes.
Serve the steaks with the sauce on top and accompanied by French fries.
