 Chicken and Cream Cheese with Raspberry Vinaigrette


Ingredients:

80g of purple lettuce washed and cut into pieces
40g wild arugula
6 mini vine tomatoes
170g of cottage cheese cut into cubes
6 slices of chicken ham in a wood oven
40g of raspberries
4 shelled walnuts broken into pieces
Ingredients for Vinaigrette:
80g of raspberries
Half a tablespoon of balsamic vinegar
2 tablespoons of extra virgin olive oil
Fine salt q.s.
Pepper q.s.

Preparation:

1. Make the vinaigrette.
In a bowl, place the raspberries, oil, vinegar, a little salt and season with pepper.
Grind everything with the magic wand.

2. In a bowl or serving platter, mix the lettuce with the arugula.
On top, spread the halved tomatoes and a few drops of vinegar to add color.
Roll the ham slices into rolls and spread them over the salad.
Also spread the cream cheese cubes, raspberries and broken walnuts.
Serve with the vinaigrette on the side.
