 Fish and Shrimp Rice


Ingredients:

300g of unpeeled shrimp
2 fish tenderloins
½ green pepper
½ red pepper
1 medium onion
2 garlic cloves
2 peeled tomatoes cut into pieces
Salt and pepper q.s.
3 cups of water
1 cup of rice
Olive oil q.b
1 bay leaf
Parsley q.b

Preparation:

1. Place the shrimp heads and shells in a pan with water, salt and heat.
After boiling it takes 10 minutes.
After this time, strain and reserve the cooking water.
2. In a pan, place the oil, chopped onion, garlic and bay leaf and sauté.
3. Add the diced peppers and cook for another 5 minutes.
4. Add the peeled tomatoes and cook on low heat for another 5 minutes.
5. Add the reserved water, bring to a boil and add the rice.
6. After 5 minutes, add the fish loins and 2 minutes before the end, add the shrimp.
7. Add the parsley and serve.
