Aromatic grilled squid

 
Ingredients


1 pack of clean squid
1 clove of garlic
1/2 lemon
Salt and black pepper q.s.
Olive oil q.s.
1 bunch of coriander
1 bunch of parsley
100 g of butter


Preparation


Thaw the squid, rinse with cold running water, drain well, season with the chopped garlic, lemon juice, salt and freshly ground black pepper.
Reserve for 10 to 15 minutes.
Drain the squid from the marinade, brush with olive oil and grill them in a very hot non-stick frying pan for 2 to 3 minutes on each side.
For the sauce: chop the herbs coarsely and add to the previously melted butter (ideally in a water bath and over low heat).
Serve the grilled squid with roasted sweet potatoes, all drizzled with the butter and aromatic sauce.
